The Guabo tree protects the coffee plants from heavy rain and extreme sun, allowing the cherries to ripen slowly. After selective harvesting, the coffee is washed and dried slowly for 15 days.\u003c\/p\u003e\n\u003cp\u003eSidra is associated with the region, but its exact origin is unknown. Through our new partner \u003cem\u003eCaravela Coffee\u003c\/em\u003e, we've discovered Fausto Miguel Romo Guevara's Sidra, which we really love.\u003c\/p\u003e\n\u003cp\u003eNanegal in Pichincha Province is known for specialty coffee. Some of the top farms (Finca Maputo) are located there. The region is also regularly represented in the top rankings at the annual Cup of Excellence coffee competitions.
