An espresso classic, interpreted in a modern way. Whether the coffee comes from a portafilter machine or a fully automatic machine – Dreispitz just works. Short, strong, uncomplicated, Dreispitz. In 2016, we started roasting in the Dreispitz district on the outskirts of Basel. Our espresso blend is dedicated to this bustling and creative neighborhood.

Why Did We Buy This Coffee?

The Dreispitz is a blend made from – you guessed it – three equal parts: one third each from Brazil, Nicaragua and India. The Arabica variety Mondo Novo from Brazil provides the base for the espresso. The coffee tastes of hazelnut and milk chocolate and creates a creamy texture. The coffee from Nicaragua from the farms Las Nubes and El Recuerdo – neighboring farms and partners of ours in Nicaragua – adds complexity to the blend. With sweet and sour notes, it balances out the blend. The washed Robusta from Bharath Belliappa from India then provides the classic espresso effect. The Robusta gives the blend weight and a strong aftertaste.

How Do We Roast This Coffee?

As a 20-kg batch on our 30-kg roaster. We usually roast our slightly darker coffees at full capacity of 30 kg, but this coffee is very hard – Canephoras have hard cell walls and need a lot of heat for faster roasting. So we roast the coffee up to just before the first crack at 70% energy, which is a lot. We roast it for a total of 13:30 minutes to the same final temperature as our APAS. The roast level is therefore similar, but the color is lighter because Canephoras don't get as dark as Arabicas at the same temperature.

Shipping Also Possible via Coffee Letter

All our coffees can be ordered in the form of a coffee letter. It is treated like a regular letter and lands in your mailbox. This reduces the postage for 250g of coffee from 7 to 2.5 francs. At checkout, you can choose between the Coffee Letter, A-Post and B-Post options.

Read Coffee Details in Beanconqueror

<a href="https://beanconqueror.com/?qr=0e5965ed" style="min-width: 165px; The focus is on soil health. The better the soil, the more resilient the coffee plant. We support agricultural approaches that work regeneratively and understand coffee production holistically. It's located just about two hours from the port city of Vitória. In no time you leave the sea behind and drive into the forested mountains of Espírito Santo — that's a stark contrast to the Cerrado or Minas Gerais, where there are hardly any forests left due to large-scale clearing in the mid-20th century. In Espírito Santo too, but here reforestation has taken place and everyone benefits from it today. Fazenda Camocim is located in intact forest, with coffee plants integrated into the property. Thanks to the forest and the elevation, the microclimate is noticeably cooler. Here Henrique and Rogelio work on planting new varieties and better understanding the climate.

Why Do We Buy This Coffee?

On one hand, because the coffee brings so much of what we love in a strong and complex espresso. Above all, when mixed with milk, the coffee really shines. On the other hand, because the work of Fazenda Camocim has an important influence on the entire region, indeed on Brazilian coffee production as a whole. Coffee production in an agroforestry system is extremely rare in Brazil — which is precisely why it's important to us to support the forces that show it's possible.

Why Does Henrique Taste The Way It Does?

Coffees from Espírito Santo, in eastern Brazil, grow quite high by local standards. Because of the slowed growth, the coffee brings considerable complexity. The bean is hard and thus tolerates a somewhat more developed roast. After importing the first pallet in 2017, interest in this coffee grew, along with the volume. Since Apas also started making appearances on our YouTube channel, it quickly became our bestseller. Roasted a bit darker than our other filter coffees, it works wonderfully for various manual brewing methods like French press, V60, or classic filter machines. A coffee that convinces us in taste and connects us as people. In collaboration with exciting partners, we develop a profile that is uncomplicated to enjoy and brings joy to many people. These are often washed coffees around 84 points, which we roast a bit darker than our other filter coffees. We rotate our coffees seasonally so we can always roast the current harvest from our partners for you.

For this coffee, the coffee cherries are fermented for 19-48 hours after harvest, then depulped and washed. This results in a clean cup with notes of panela, chocolate, creamy caramel, and subtle orange.

How Do We Roast This Coffee?

We roast the coffee in 15kg batches on our 30kg Giesen roaster. The roast time is 9:30 min with a development time of 1:15 min. For developing this roast profile, we did two things differently than when we roast other washed coffees: First, we increased the batch size by 2.5kg, which lengthens the roast time slightly and makes the coffee a bit milder. Second, we raised the final temperature a notch, which processes the sugars in the coffee further and thus enhances the caramel note.

Shipping Also Available as Coffee Letter

All our coffees can be ordered as a coffee letter. With our interpretation, we bring together things that are important to us: transparently traded specialty coffees, sourced through our partners at Farmers Coffee in Espírito Santo, produced by family farms. Dark roasted with a focus on body and bold notes.

Why Does the Compadre Taste the Way It Does?

The 50% Conilon Robusta gives the Compadre a heavy body and bold, spicy, dark chocolate notes. The 50% Arabica from the mountains of Castelo balances the Compadre. Nutty notes and a soft texture bring harmony to the cup. We don't roast any other coffee as dark as the Compadre, and with this we emphasize its classic character.

Tell Me More About Compadre Espresso

Together with Farmers Coffee, we visited Arabica farms at 1200 meters and Conilon farms at 80 meters above sea level in Espírito Santo. The topography is impressive, and so is the history. Espírito Santo has a history shaped strongly by immigration. Many Italian families immigrated at the end of the 19th century, worked in coffee production, and gradually took over coffee farms.

The two families contributing their coffee to the Compadre also have Italian roots: The Romãos produce their pulped natural Arabica in the mountainous region around Castelo, while the Magieros produce their pulped natural Conilon in the plains of São Mateus in northern Espírito Santo. In a sense, a very large historical circle closes: the coffee from these two families with Italian roots now becomes an espresso based on the Italian tradition.

How Do We Roast This Coffee?

We chose a medium-long and hot roast. This gives us an extremely soft, dense, creamy and balanced cup with incredibly integrated acidity. The cup isn't balanced enough for our taste. That's why we pull the shot 3-5 seconds longer, keeping the same drink ratio.
